Greetings!

Each year at this time we are filled with many mixed emotions. The rush of May parties, graduations, and insanely busy weekends are always a challenge to get through. It is also the time when we say goodbye to some friends. Many of our patrons and employees will be leaving Champaign-Urbana to start their new lives in other communities.

It always feels to me like a giant cloud of calmness descends upon our fair flat cities at the exact moment that last graduation ceremony ends, inviting our "townies" to come out and venture forth to destinations left for more personal moments.

  • Meet Chef Dan!!

    Silvercreek is proud to announce our new chef, Daniel Folkman. Dan has moved here from Vail, Colorado.

    Daniel graduated from Le Cordon Bleu Cooking Academy in Chicago with honors. He worked in some prestigious Downtown Chicago restaurants, including Charlie Trotters and Naha.

    After meeting and marrying his wife Stacy, Dan's love of snowboarding took him to the mountains of Colorado where he combined his love for great food with his love for mountains and snow.

    Vail is a great restaurant town and after working at several, he found a home with Chef Kevin Nelson and helped make their Bistro the number #1 rated Vail restaurant.

    Dan is originally from Ames, Iowa, which is a sister city to Champaign-Urbana. He is excited about combining the skills he has learned from some of the best chefs with his understanding of what midwesterners are looking for.

    His food focuses on using the best quality ingredients, locally grown when possible, combined with full flavor presentations. He is very excited about our local movements to sustainable agriculture and organic foods and the closeness of the Urbana Farmer's Market.
    Dan's wife, Stacy is a music teacher and hopes to be teaching in the area this fall. They live with their black lab mix, Arlo.

    We have already introduced our new menu and we are excited about how well it is being received.

    Our outdoor cafe tables are set up at both Courier and Silvercreek. The weather's great right now, so come on out and enjoy your meal outside! (Fresh air free.)

    Help us Launch our new "Appy Hour"!! at Silvercreek, on Friday June 1, and every Friday thereafter, Appetizers will be half-price from 3:00 to 6:00. A fantastic selection of beer and wine, with live music and lots of fun.

    Don't forget about Courier's fantastic breakfast menu! We offer everything from a traditional Basic Breakfast with bacon and eggs, to vegetarian specialties such as Cha-Cha Charritos (grilled black bean patty scrambled with egg whites and folded into a whole-wheat tortilla, with chihuahua cheese, diced tomatoes, and salsa verde.

    Our multi-grain pancakes are popular, and you're looking for lighter fare, try the fresh fruit bowls served with nuts or yogurt, if you like. Stop by and see us Saturday morning after you've done your shopping at the Market on the Square or any other day of the week!


    Recipe of the Month:
    Goat Cheese Polenta Cakes

    2 cups polenta
    1/2 gallon milk
    1 log goat cheese
    1/2 cup parmesan

    Bring milk to a boil and quickly stir in polenta.
    Simmer for 7 minutes.

    Take 1 lb log of Chevre (goat cheese) and gently fold until even and smooth.

    Then fold in parmesan until blended.

    Reduce heat and pour into cake pan to desired thickness.

    Allow to cool. Once fully set, slice into desired shape (square, circle, or sticks) and prepare by sauteeing, baking or deep frying.

    Use as an accompaniment or a main dish.
