Spring has Sprung! This time of year is really exciting for us at The Courier and Silvercreek. Outside dining, weddings, and parties in The Greenhouse, the return of live music, and best of all, the bounty of the Urbana Farmer's Market returns. Read on for some of the special things we are bringing downtown.

    Healthy fresh items are always available on the salad bar at The Courier Cafe. Each day our salad bar staff prepares wonderful, fresh ingredients to make our salad bar the best around. Warm rolls and sweet breads add to the abundant choices.

    Our salad bar is sold by the pound, so you never pay for food you won't eat. We try to rotate fresh seasonal selections and always have vegetarian options like tabouleh and silken tofu available.

    Some new items to check out are the smoked turkey, chipotle ranch dressing and tortilla ribbons. If there is anything you would like to see added, please let Georgia, the salad bar manager, know.

    The wedding season is rapidly approaching, and our pastry chef, Eve, is gearing up. She makes the most beautiful, but equally important, the most wonderful tasting wedding cakes we have ever had. If you are planning a wedding and desire a very special cake, give us a call, and discover what we have to offer. No cake is too small.

    Our Greenhouse dates are filling quickly, so if you are considering a special event, call Prue or Allen to discuss what Silvercreek can to do to make your event truly spectacular.

    The Queen of Hearts Has Baked Some Tarts... The next "High Tea" in our tea series is coming up quickly and is nearly sold out, so if you or someone you know wants to attend, please encourage them to call soon.

    Chef Eve will be preparing English savories and this "tea" will be in "The Greenhouse" for an enlightening experience. Great food, spectacular vintage and ornamental hats, vintage tea service and hand-painted china always make these gatherings a delight.

    Silvercreek is proud to participate in the 5th Annual Boneyard Arts Festival, which takes place on April 20–22.

    Silvercreek will be exhibiting the paintings of a very talented UI creative writing student and artist, Harmony Rosales, throughout April.

    Sampled here is a portrait of Marilyn Monroe, entitled "Lost." Stop in through the month of April to see the rest of the portraits in her "Icons" series: Luis Armstrong, Frank Sinatra, Dean Martin, Sammy Davis, Jr., Billy Holiday, Celia Cruz, Hector Lavoe, and Miguel Pinero.

    Courier Cafe: Ate After Eight

    Courier Cafe has a treat for our Night Owl dinners: An After Eight menu, with discounted prices for various entree & drink combinations. Anytime after 8:00 p.m., you can order from the special menu. After you order 8 entrees, your ninth will be free! Ask your server for your Ate After Eight punchcard next time you come in.


    Recipe of the Month:
    Lime-Chili Dressing

    3/4 tablespoons garlic, minced

    2 tablespoons shallot, minced

    1 jalapeno, finely diced

    1/2 cup green onion, finely chopped

    1 tablespoon chili paste

    3 cups rice vinegar

    5 limes, juiced

    zest of 1-1/2 limes

    3/4 cup sugar

    1/4 c. cilantro, coarsely chopped

    1/4 c. red pepper, finely diced

    1 c. hot water

    1. Zest 1-1/2 limes. Juice 5 limes.

    2. In a bowl, mix cilantro, sugar, lime juice and rice vinegar. Mix until sugar dissolves.

    3. Add the vegetables to the sugar mixture and mix well.

    4. Add the chili paste and lime zest. Blend well.

    5. Add the hot water to set up dressing.

    Refrigerate.
